A ‘Micro’ Dialogue: From Earth to Eats

“Fermentation” is closely intertwined with our daily lives. In this agri-food workshop, we begin with the soil of a regenerative farm – exploring how farmers apply microorganisms in the field – then move on to locally made nukazuke (rice bran pickles) to understand the relationship between microbes, food and human health. Participants will also harvest seasonal crops on-site to create their own nukamiso (rice bran-bed), which you can take home to make your own pickles using the bed, continuing this fermentation journey!

This activity is funded by the HKEX Foundation.
